The Ultimate Summer Side Dish: Potato Salad Recipe

POTATO SALAD

Summer 2020 clearly a summer of limited movement for my family and I (for obvious reasons). So because of that I am trying to bring all my summer favorites to the house! Now I typically only have potato salad when I attend cookouts or if I am really craving it.

Now, I am Nigerian-American so potato salad isn’t something we typically eat or grow up eating. My love for this side dish grew over time. I am actually pleased to be able to share my own potato salad recipe with you. This recipe was created after  trying other people’s recipes, trial and error, and much tweaking. Now I don’t claim to be a chef or the world’s best cook… I am just a woman who loves food and loves cooking for my family.

Creamy Potato Salad

This is the ultimate summer side dish. This potato salad will keep everyone coming back for more!

Ingredients

  • 8-10 Potatoes
  • 5-7 large eggs
  • 3 Celery Stalks
  • 4 Green Onion Stalks
  • 2 cups Mayonnaise
  • 2 tbsp Yellow Mustard
  • 3 tbsp Sweet Pickle Relish
  • 2 tbsp White Vinegar
  • Salt and Pepper to taste
  • Sprinkle of Paprika

Instructions

  • Peel potatoes, cube them, and boil in salted water until tender. In a separate pot, boil eggs.
  • While potatoes are boiling, dice celery and green onions.
  • Make the dressing by combining the mayonnaise,yellow mustard, and sweet pickle relish.
  • Once the potatoes are boiled, drain and add white vinegar, salt and pepper. Then mix and allow it to cool.
  • Peel and chop the eggs, then add it to the potatoes.
  • Add diced celery and onions to the potatoes, then add the dressing mixture.
  • Mix everything together, add salt and pepper if needed.
  • Sprinkle the top with paprika, and chill for at least an hour.
